Taro Bun French Toast with Orange, Pistachio and Banana
On my 30th birthday, I jetted off to the north shore of Oahu, Hawaii. I’ve been to the island before and was stuck in hotels, navigating crowded sidewalks and restaurants I already knew. Picking a rental in Rocky Point ensured quiet and a short walk to a less-trafficked beach.
Since we were a few miles away from the nearest town, we stopped at Foodland to pick up groceries. One of my favorite breakfasts on the patio was this simple French toast made with taro buns. If you can’t find taro buns, any sweet bun like pan de leche or brioche will work. Even in a pinch, hamburger buns or potato rolls suffice, too, I’d just add a bit more sugar or add maple syrup when serving.
Speaking of syrup, the fruits were so flavorful that we didn’t need it at all. If you have some cinnamon, a dash doesn’t hurt!
Taro Bun French Toast
Mix the egg, sugar, and milk in a wide bowl with a fork or whisk.
Slice the taro buns in half crosswise to make 4 pieces.
Slice the tangerine into wheels by cutting the whole fruit crosswise, twice. Remove any seeds, if any.
Heat half the butter in a frying pan on medium heat.
Dip both sides of each taro bun slice in the egg mixture.
Fry the coated pieces of bread in the butter for 2 to 4 minutes per side, until browned.
Transfer the finished toasts to a plate and garnish with tangerine, banana, and pistachios.
