I’ve mentioned this burrito wedding several times in my wedding writing.
“While I was walking through the McCarren Greenmarket after finishing a long morning of working on my first cookbook, Sam and Nico got in touch: “I know you really need something else to do right now so… would you cater our wedding?! Our hearts are set on a burrito bar.” Not only was it unheard of to have a Chipotle-like assembly line at a wedding, but I knew how important burritos were to these two.”
I met my friend Sam over a decade ago through The Tank, where I used to work (and now am on the board!). We’ve baked two-tone matcha cookies for fun, grilled in her backyard, she helped me cater some of my first parties, and even swapped clothes with me because we are the same height. She’s gone on to create her own company and hired me to cater her office holiday parties. We’ve become great friends.
But here we were, texting about this burrito idea. Gosh, how were we going to do this? To test drive the idea, I held a pop-up at the original location of Daddy’s Bar in Williamsburg. Could I make enough burritos in a short window of time? The answer was yes. It streamlined the menu for us. Instead of coursing out a long, drawn-out dinner, we wrapped 75 burritos for the guests and put out the rest in a buffet for anyone who wanted to assemble their own.
After our burrito service had finished, I made a costume change to join the party and ran out onto the dance floor with big bowls of peanut butter pretzels and popcorn with Nico’s favorite flavor: nutritional yeast and lime zest.
