When Sam and Tim approached me about their party, they didn’t exactly tell their guests they were getting married. It was supposed to come off as a big Halloween party (which is legit!). But to ensure people would show up, they let the cat out of the bag. It was so exhilarating to hear about their plans. All handmade decorations they’ve been working on as well as elaborate masks and costumes for themselves. It was fun to prepare food and be stared at by a grudge painting with hair hanging off it on the opposite wall.
Because Sam hails from Trinidad and Tim from Puerto Rico, we came up with fun snackable party food like baigan choka (roasted eggplant), tropical fruit skewers, cassava chips, and Jarritos. For the main, we took one of their favorite dishes to cook at home— moussaka and made it easy to handle in a couple of bites on freshly fried roti. It took a couple tries to get the roti right, but by showtime, we were rolling like a couple of aunties in our kitchen.As a bonus, our crew has ghoul makeup to get into the creepy spirit!
